Instructions

  1. Brown the butter: Place the butter in a light-colored saucepan over medium heat. Stir occasionally as it melts. It will foam up, then the foam will subside. Keep stirring until golden brown specks form at the bottom (about 5-7 minutes). Remove from heat immediately and pour into a heatproof bowl. Let cool for 10-15 minutes until warm but not hot.
  2. Combine the dry ingredients: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. Mix the wet ingredients: In a large bowl, combine the cooled browned butter, brown sugar, and granulated sugar. Beat on medium speed for 2-3 minutes until the mixture looks like wet sand and is slightly lighter in color.
  4. Add eggs and vanilla: Add the eggs one at a time, beating well after each addition. Scrape down the sides of the bowl. Add the vanilla and beat for another 30 seconds until smooth and glossy.
