No-bake, bite-sized cheesecake bites with a fresh strawberry center, creamy cheesecake filling, and a crisp dark chocolate shell. Perfect for entertaining or a quick sweet treat.

  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup cold heavy cream
  • 1215 medium fresh strawberries, hulled and patted dry
  • 1 1/2 cups dark or semi-sweet chocolate chips (about 9 ounces)
  • 1 tablespoon coconut oil or vegetable shortening
  • Flaky sea salt (optional but highly recommended)

Instructions

  1. Prepare the strawberries: Wash and pat dry completely. Cut out the hull to create a small cavity. Set aside on a paper towel-lined plate.
  2. Make the cheesecake filling: Beat softened cream cheese with an electric mixer until smooth and fluffy, about 2 minutes. Add powdered sugar and vanilla extract; beat until combined.
  3. Whip the cream: In a separate chilled bowl, beat cold heavy cream until stiff peaks form.
  4. Fold together: Stir one-third of the whipped cream into the cream cheese mixture to lighten. Gently fold in the remaining whipped cream until no white streaks remain.
  5. Fill the strawberries: Transfer filling to a piping bag or zip-top bag with a snipped corner. Pipe filling into each strawberry cavity, creating a small dome. Place on a parchment-lined baking sheet. Freeze for at least 1 hour until firm.
  6. Melt the chocolate: In a small deep bowl, microwave chocolate chips and coconut oil in 30-second intervals, stirring until smooth and glossy.
  7. Dip the frozen bites: Working in small batches, dip each frozen bite into melted chocolate, covering the dome and most of the strawberry. Let excess drip off. Place back on baking sheet. Sprinkle with flaky sea salt if desired.
  8. Set and serve: Refrigerate for at least 30 minutes until chocolate is set. Serve cold or after 5 minutes at room temperature.

Notes

Ensure strawberries are completely dry to prevent chocolate from seizing. Freeze filled strawberries for at least 1 hour before dipping. Work in small batches to keep bites cold. For a cleaner finish, use a fork to lift bites out of chocolate.
