This moist and tender banana pumpkin bread combines ripe bananas and pumpkin puree for a perfectly spiced fall loaf. Made in one bowl with simple pantry ingredients, it’s an easy, foolproof recipe that’s even better the next day.

  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ½ teaspoon salt
  • 1 cup mashed ripe bananas (about 2 large bananas)
  • ½ cup pumpkin puree (120g)
  • ⅓ cup vegetable oil (80ml)
  • ½ cup granulated sugar (100g)
  • ¼ cup brown sugar, packed (50g)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon turbinado sugar (optional, for topping)
  • ¼ cup chopped pecans or walnuts (optional, for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on the long sides. Lightly grease exposed ends.
  2. In a large mixing bowl, mash ripe bananas with a fork until mostly smooth with a few small lumps (about 1 cup).
  3. Add pumpkin puree, vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract. Whisk until smooth and well combined.
  4. Add flour, baking soda, cinnamon, nutmeg, ginger, cloves, and salt on top of the wet mixture. Gently stir dry ingredients together on top before folding everything together with a rubber spatula.
  5. Fold until just combined—no streaks of flour remain. Do not over-mix; a few lumps are fine.
  6. Pour batter into prepared loaf pan and spread evenly. Sprinkle turbinado sugar and chopped nuts on top if using.
  7. Bake on center rack for 50–60 minutes. At 45 minutes, check browning; tent with foil if needed. Bread is done when a toothpick inserted in center comes out clean or with a few moist crumbs.
  8. Cool in pan on a wire rack for 15 minutes. Use parchment handles to lift bread out and transfer to rack to cool completely (at least 1 hour) before slicing.
  9. Slice with a serrated knife using a gentle sawing motion. Serve plain, with butter, or with honey.

Notes

Do not over-mix the batter to avoid a tough loaf. Check baking soda freshness by testing with vinegar. Use room temperature eggs for best texture. Let bread cool completely before slicing to prevent crumbling. For consistent results, weigh flour (195g). Bread improves overnight as flavors meld.
