Ingredients

  • All-purpose flour, 1 ½ cups (190g)
  • Rolled oats, 1 cup (90g)
  • Brown sugar, ½ cup (100g), packed (for crust)
  • Unsalted butter, ½ cup (113g), melted (for crust)
  • Salt, ¼ teaspoon (for crust)
  • Pecan halves, 2 cups (200g)
  • Maple syrup, ¾ cup (180ml)
  • Brown sugar, ½ cup (100g), packed (for filling)
  • Large eggs, 2, at room temperature
  • Unsalted butter, 3 tablespoons (42g), melted (for filling)
  • Bourbon, 2 tablespoons (30ml)
  • Vanilla extract, 1 teaspoon
  • Salt, ¼ teaspoon (for filling)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on the long sides.
  2. Make the crust: In a medium bowl, whisk together flour, rolled oats, brown sugar, and salt. Pour in melted butter and stir with a fork until mixture resembles wet sand and holds together when squeezed. Press evenly into the prepared pan. Bake for 12 minutes until edges are just golden. Set aside to cool slightly.
  3. Toast pecans: Spread pecan halves on a baking sheet and toast for 5-7 minutes until fragrant and slightly darker. Let cool, then roughly chop into a mix of sizes.
  4. Make the filling: In a large bowl, whisk together maple syrup, brown sugar, eggs, melted butter, bourbon, vanilla extract, and salt until smooth and glossy. Fold in chopped pecans.
  5. Assemble: Pour filling over pre-baked crust, spreading evenly. Bake for 25-30 minutes until edges are set and center is slightly jiggly (like Jell-O).
  6. Cool completely in the pan on a wire rack (about 2 hours). Use parchment overhang to lift slab onto a cutting board. Cut into 24 bars with a sharp knife, wiping blade clean between cuts.

Notes

Don’t overbake the crust; it continues baking with the filling. Use room temperature eggs to avoid lumpy filling. Toast pecans for deeper flavor. Let bars cool completely before cutting to prevent runny filling. For clean cuts, chill bars for 30 minutes before slicing. Store in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
