Quick, crispy, and endlessly customizable quesadillas perfect for dorm life. Made with simple ingredients and minimal equipment, these come together in just 15 minutes for a satisfying meal or snack.

  • 2 (8-inch) flour tortillas
  • 1/2 cup (60g) shredded cheddar cheese
  • 1/4 cup (30g) shredded mozzarella cheese
  • 1 tablespoon salted butter or cooking spray
  • Optional fillings (pick 1-2): 1/2 cup cooked chicken (shredded or diced), 1/4 cup canned black beans (drained and rinsed), 1/4 cup sautéed bell peppers and onions, 1-2 tablespoons pickled or fresh jal…

Instructions

  1. Prep your fillings (5 minutes): If using cooked proteins, bring to room temperature. Shred or dice chicken, drain and rinse black beans, chop vegetables. Pat everything dry with a paper towel.
  2. Mix your cheese blend (1 minute): In a small bowl, combine shredded cheddar and mozzarella. Mix evenly.
  3. Assemble the quesadilla (2 minutes): Lay one tortilla flat. Sprinkle about 1/4 cup of cheese blend evenly over the tortilla, leaving a 1/2-inch border. Add fillings on one half. Sprinkle another 1/4 cup cheese on top. Place second tortilla on top and press gently.
  4. Cook in a skillet (6-8 minutes): Heat a non-stick skillet over medium heat. Add 1/2 tablespoon butter and let melt. Place quesadilla in skillet. Cook 3-4 minutes until bottom is golden brown and crispy. Flip carefully, add remaining butter, and cook another 3-4 minutes until cheese is melted.
  5. Microwave alternative (2-3 minutes): Place assembled quesadilla on a microwave-safe plate. Microwave on high for 30 seconds, flip, and microwave another 30 seconds. Repeat in 15-second increments until cheese melts. For crispier texture, finish in a toaster oven for 2 minutes.
  6. Rest and slice (2 minutes): Transfer to a cutting board and let rest 1-2 minutes. Slice into 4-6 wedges using a sharp knife or pizza cutter.
  7. Serve immediately with salsa, sour cream, guacamole, or hot sauce.

Notes

Don’t overstuff; pat fillings dry to avoid sogginess; use medium heat; let rest before slicing. For best results, pre-toast tortillas in a dry skillet for 30 seconds per side before assembling.
