  • 1 cup (120g) fresh pumpkin seeds, cleaned and patted dry
  • 1 tablespoon (15ml) olive oil
  • 1 teaspoon (3g) garlic powder
  • 3 tablespoons (15g) finely grated Parmesan cheese
  • ½ teaspoon (2g) kosher salt
  • ⅛ teaspoon cayenne pepper (optional)

Instructions

  1. Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Clean the pumpkin seeds: Place seeds in a colander and rinse under cold water, rubbing away pulp. Shake off excess water, then spread on a kitchen towel and pat dry. Let air-dry for 10 minutes if possible.
  3. In a medium bowl, toss dried seeds with olive oil, garlic powder, and kosher salt until evenly coated. Spread in a single layer on the prepared baking sheet.
  4. First roast (drying phase): Bake at 300°F for 20 minutes, stirring halfway through. Seeds will look pale and feel dry but not crispy.
  5. Remove pan from oven and sprinkle grated Parmesan over seeds. Stir gently to coat.
  6. Second roast (crisping phase): Increase oven temperature to 350°F (175°C). Return pan to oven and bake for 10-15 minutes, stirring once halfway. Watch closely during the last 3 minutes—seeds are done when deep golden brown and cheese forms a crispy crust.
  7. Cool completely on the pan for at least 10 minutes. Seeds will continue to crisp as they cool.
  8. Break apart any clusters with your hands and serve immediately or store for later.

Notes

Dry seeds thoroughly before roasting to ensure crispiness. Use freshly grated Parmesan for best melting. Watch the second roast closely to prevent burning. Cool completely before storing to maintain crunch.
