Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone mat.
  2. Clean the pumpkin seeds: separate from pulp, rinse under cold water, and pat dry.
  3. Boil the seeds: bring a medium saucepan of water to a boil, add seeds, and boil for 5 minutes. Drain and pat dry.
  4. Mix cinnamon sugar: in a small bowl, combine sugar, cinnamon, and salt.
  5. Toss with butter: in a mixing bowl, combine boiled seeds and melted butter. Add vanilla extract if using.
  6. Add cinnamon sugar: sprinkle mixture over seeds and toss to coat evenly.
