Instructions

  1. Prep your ingredients: Pat chicken thighs dry with paper towels and season generously with salt and pepper. Trim dark green tops off leeks, slice in half lengthwise, rinse under cold water to remove grit, then slice into 1/4-inch half-moons. Mince garlic.
  2. Sear the chicken: Heat 2 tablespoons oil in a Dutch oven or heavy-bottomed pot over medium-high heat. Place chicken thighs in a single layer (work in batches if needed) and cook without moving for 4-5 minutes until deep golden brown. Flip and cook another 3-4 minutes. Transfer chicken to a plate (it won’t be fully cooked).
  3. Sauté aromatics: Reduce heat to medium. Add remaining 1 tablespoon oil if needed. Add leeks and a pinch of salt; cook, stirring occasionally, until softened and translucent, about 4 minutes. Add garlic and cook 30 seconds until fragrant.
  4. Deglaze the pot: Pour in 1/2 cup chicken broth and use a wooden spoon to scrape up browned bits from the bottom.
  5. Add rice and broth: Stir in 1 cup wild rice blend. Pour in remaining 3 1/2 cups broth, add thyme sprigs and bay leaves, and stir to combine.
  6. Return chicken: Nestle seared chicken thighs back into the pot along with any accumulated juices.
  7. Simmer: Bring to a gentle boil, then reduce heat to low, cover with a tight-fitting lid, and simmer for 40-45 minutes. Check rice at 35 minutes; it should be tender with a slight chew. Chicken should be fork-tender.
  8. Rest and serve: Remove pot from heat. Discard thyme sprigs and bay leaves. Use two forks to shred chicken directly in the pot, stirring into rice and broth. Let rest 5 minutes. Taste and adjust salt and pepper as needed.
