  • 1/2 cup (120ml) evaporated milk
  • 1 large egg
  • 1/4 cup (50g) granulated sugar
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon salt
  • 1 cup (about 120g) yellow cake mix
  • 1/4 cup (55g) unsalted butter, melted
  • 1/4 cup (30g) chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish with butter or non-stick spray.
  2. In a medium bowl, whisk together the pumpkin puree, evaporated milk, egg, sugar, pumpkin pie spice, and salt until completely smooth.
  3. Pour the pumpkin mixture into the prepared baking dish and spread into an even layer.
  4. Evenly sprinkle the dry yellow cake mix over the entire surface of the pumpkin filling. Do not stir.
  5. If using nuts, sprinkle them over the cake mix.
  6. Drizzle the melted butter as evenly as possible over the top of the cake mix.
  7. Bake for 35-40 minutes, until the top is deep golden brown and the filling is bubbly around the edges.
  8. Let the dump cake cool on a wire rack for at least 10-15 minutes before serving. Serve warm.
