Wholesome Chicken and Wild Rice Soup with Fall Vegetables

This hearty yet light soup features tender chicken, nutty wild rice, and sweet fall vegetables in a savory broth. It’s a comforting, nourishing meal that’s perfect for cool autumn days.

Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 2 large carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 garlic cloves, minced
  • 1 pound boneless, skinless chicken thighs, cut into 1-inch cubes
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 2 bay leaves
  • 8 cups low-sodium chicken broth
  • 1 cup wild rice, rinsed
  • 2 cups butternut squash, peeled and cut into 1/2-inch cubes
  • 2 medium parsnips, peeled and diced
  • 1/4 cup fresh parsley, chopped (for garnish)
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery. Cook, stirring occasionally, for 6-8 minutes until softened and onion is translucent.
  2. Add minced garlic, dried thyme, and dried rosemary. Cook for 1 minute until fragrant.
  3. Push vegetables to the sides of the pot and add cubed chicken thighs. Season with a pinch of salt and pepper. Cook for 4-5 minutes, stirring occasionally, until lightly browned on all sides.
  4. Pour in chicken broth, scraping up any browned bits from the bottom of the pot. Add rinsed wild rice, bay leaves, cubed butternut squash, and parsnips. Stir together.
  5. Bring soup to a boil, then reduce heat to low, cover, and simmer for 45-55 minutes until wild rice is tender and starting to split open, and vegetables are fork-tender.
  6. Remove bay leaves and discard. Taste and adjust seasoning with salt and black pepper. Ladle into bowls and garnish with fresh chopped parsley. Serve hot.

Notes

For a richer soup, stir in 1/2 cup heavy cream or full-fat coconut milk at the end. Add greens like kale or spinach during the last 5 minutes. For a vegetarian version, replace chicken with chickpeas and use vegetable broth. Wild rice cooking time varies; start checking at 40 minutes. Soup thickens as it sits; add extra broth when reheating.
