Ultra-Moist Chocolate Chip Zucchini Bread

A soft, tender, bakery-style zucchini bread with sweet pockets of melted semi-sweet chocolate chips, perfect for a cozy breakfast or snack.

  • 2 cups (250g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon (optional but recommended)
  • 1 cup packed (200g) brown sugar
  • 1/4 cup (50g) granulated sugar
  • 1/3 cup (80ml) vegetable oil (can substitute with melted coconut oil)
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 cups shredded, packed zucchini (about 2 medium zucchinis)
  • 3/4 cup (135g) semi-sweet chocolate chips
  • Optional: 1/2 cup chopped walnuts or pecans

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Shred the zucchini using a box grater or food processor. Pat the shredded zucchini with a clean towel to remove excess moisture but keep some moisture for softness.
  3. In a large bowl, whisk together the flour, baking soda, baking powder, salt, and ground cinnamon.
  4. In a separate medium bowl, whisk the brown sugar, granulated sugar, and vegetable oil until smooth. Add eggs one at a time, whisking until fully incorporated. Stir in vanilla extract.
  5. Fold the shredded zucchini into the wet mixture gently. Then fold in the chocolate chips and optional nuts, being careful not to overmix.
  6. Pour the wet ingredients into the dry ingredients bowl. Fold gently until just combined and no streaks of flour remain.
  7. Scrape the batter evenly into the prepared loaf pan and smooth the top with a spatula.
  8. Bake for 55-60 minutes, checking at 50 minutes with a toothpick. It should come out with a few moist crumbs but no wet batter.
  9. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Do not overmix the batter to avoid dense bread. Pat zucchini to remove excess moisture but keep some for moist crumb. Toss chocolate chips in flour before folding to prevent sinking. Use room temperature eggs for better texture. Cool bread completely before slicing to prevent crumbling. Tent with foil if bread browns too quickly.
