Ingredients

Scale
  • 46 ounces prosciutto
  • 46 ounces salami
  • 34 ounces pepperoni
  • 34 ounces capicola or soppressata (optional)
  • 46 ounces aged cheddar
  • 46 ounces brie
  • 46 ounces gouda
  • 4 ounces goat cheese log
  • 1 box crackers (mix of buttery rounds, whole wheat squares, seeded crisps)
  • 1 bag breadsticks or crostini
  • 1 cup mini pretzels or pretzel sticks
  • 1 cup red and green grapes
  • 1 apple (honeycrisp or granny smith), thinly sliced
  • 1/2 cup dried figs or apricots
  • 1 cup cherry tomatoes
  • 1 cucumber, sliced into rounds
  • 1/4 cup honey
  • 1/4 cup whole grain mustard
  • 1/2 cup olives (Castelvetrano or kalamata)
  • 1/2 cup pickles (cornichons or dill pickle spears)
  • 1/2 cup nuts (Marcona almonds or candied pecans)
  • Fresh herbs (rosemary sprigs, thyme) for garnish
  • Edible flowers (nasturtiums or pansies) for garnish (optional)

Instructions

  1. Choose a large board or platter. Place 3-4 small bowls or ramekins in different corners and fill with honey, mustard, olives, and pickles.
  2. Unwrap cheeses and place them at different spots around the board. Cut cheddar into cubes or thin slices. Leave brie whole with rind on near the honey bowl. Slice gouda into thin wedges. Space cheeses out.
  3. Fold or roll meats into attractive shapes: fold prosciutto into loose ribbons, fold salami slices in half twice to create triangles. Arrange in small clusters near cheeses.
  4. Place grapes in small bunches. Arrange apple slices in a fan pattern near cheddar. Scatter cherry tomatoes and cucumber rounds in gaps. Add dried figs or apricots in small piles.
  5. Pour crackers into small piles around the board. Place breadsticks in a tall cluster. Scatter pretzels in remaining gaps. Leave some board surface visible.
  6. Drizzle honey over brie or goat cheese. Spoon mustard into its bowl. Add nuts in small clusters near cheeses. Place pickles and olives in their bowls. Garnish with fresh herbs.
  7. Step back and adjust: fill gaps with extra crackers or fruit, adjust crowded clusters, wipe spills. Add edible flowers if desired.

Notes

Let cheeses come to room temperature 30-45 minutes before serving for best flavor. Fold meats for visual interest. Use negative space to avoid overcrowding. Balance flavors and textures. Prep everything before arranging. Don’t forget little touches like honey drizzle or fresh herbs. For a low-carb version, replace crackers with cucumber rounds and bell pepper strips. For a vegetarian version, omit meats and double up on cheeses and vegetables.
