  • 1/4 cup heavy cream
  • 1/4 cup light brown sugar, packed

  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (preferably freshly grated)
  • 1/2 teaspoon kosher salt
  • 1 1/2 cups raw pecans, chopped
  • 1/2 cup all-purpose flour
  • 1/2 cup light brown sugar, packed
  • 4 tablespoons unsalted butter, cold and cut into small cubes
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt

Instructions

  1. Preheat oven to 400°F (200°C). Scrub sweet potatoes, prick with a fork, and roast on a foil-lined baking sheet for 45-60 minutes until very soft. Let cool slightly, then scoop out flesh (about 4 cups).
  2. While potatoes are still warm, add softened butter and mash or process until smooth.
  3. Add brown sugar, heavy cream, eggs, vanilla, cinnamon, nutmeg, and salt. Stir until completely combined and smooth.
  4. Pour filling into a greased 9×13-inch baking dish and spread evenly.
  5. In a medium bowl, whisk together flour, brown sugar, cinnamon, and salt. Cut in cold butter using a pastry blender or forks until mixture resembles coarse meal with pea-sized butter bits.
  6. Add chopped pecans and toss to coat. Crumble should be clumpy and uneven.
  7. Sprinkle pecan crumble evenly over the sweet potato filling. Do not press down.
  8. If baking immediately: Bake at 350°F (175°C) for 35-40 minutes until filling is set around edges and slightly jiggly in center, and crumble is deep golden brown. Let rest 10 minutes before serving.
  9. If making ahead: Cover assembled unbaked casserole tightly and refrigerate up to 2 days. Remove from fridge while oven preheats (about 20 minutes). Bake as directed, adding 5-10 minutes. Tent with foil if topping browns too quickly.

Notes
