  • 2 tablespoons olive oil
  • 3 tablespoons pure maple syrup, divided
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • ½ cup chopped raw pecans
  • ¼ cup rolled oats
  • 2 tablespoons packed brown sugar
  • 2 tablespoons cold unsalted butter, cubed
  • ½ teaspoon ground cinnamon
  • Pinch of nutmeg (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the delicata squash thoroughly. Cut off the stem end and bottom tip, then slice in half lengthwise. Scoop out seeds and stringy bits. Slice each half into ½-inch thick half-moons.
  3. In a large bowl, toss the squash slices with olive oil, 1 tablespoon maple syrup, salt, and black pepper until well coated.
  4. Arrange the squash in a single layer on a parchment-lined baking sheet, ensuring pieces are not overlapping.
  5. Roast for 15 minutes.
  6. Meanwhile, make the crumble: In a small bowl, combine pecans, oats, brown sugar, cinnamon, and nutmeg. Add cold butter cubes and cut in with a pastry cutter or fork until mixture resembles coarse crumbs with some pea-sized butter pieces.
  7. After 15 minutes, remove the pan from the oven. Flip each piece of squash. Sprinkle the crumble evenly over the squash. Drizzle the remaining 2 tablespoons maple syrup over everything.
  8. Return to the oven and roast for another 10-15 minutes, until squash is tender and easily pierced with a fork, and crumble is golden brown and fragrant. If crumble browns too quickly, tent loosely with foil.
  9. Let rest on the pan for 5 minutes before serving.
  10. Serve warm, spooning any fallen crumble back on top.
