The Best Classic One-Bowl Banana Bread: Moist & Easy

This classic one-bowl banana bread is moist, tender, and made with simple pantry ingredients. It’s the perfect way to use up overripe bananas and requires no mixer.

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter (unsalted)
  • 3/4 cup granulated sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour (spooned and leveled)
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • Optional: 1/2 cup mix-ins (chocolate chips, chopped walnuts, or pecans)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray. Optionally, line with parchment paper leaving an overhang on the long sides.
  2. In a large mixing bowl, mash the ripe bananas with a fork until mostly smooth with a few small lumps.
  3. Pour the melted butter over the mashed bananas and stir until combined.
  4. Add the sugar, egg, and vanilla extract. Stir until smooth and glossy.
  5. Sprinkle the flour, baking soda, and salt over the wet mixture. Stir gently until just combined. A few streaks of flour are okay.
  6. If using, gently fold in the mix-ins (chocolate chips, nuts, etc.) with about 10 folds.
  7. Pour the batter into the prepared loaf pan and spread evenly. Tap the pan gently on the counter to release air bubbles.
  8. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent loosely with foil after 45 minutes.
  9. Cool in the pan for 10 minutes, then lift out using parchment handles or invert onto a cooling rack.
  10. Cool completely before slicing (at least 30 minutes).

Notes

For best results, use very ripe (spotty or black) bananas. Do not overmix the batter. Let the bread cool completely before slicing to avoid a gummy texture. The bread can be stored at room temperature for up to 4 days or frozen for up to 3 months.
