Instructions

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper or silicone mats to prevent sticking.
  2. In a medium bowl, sift together 2 ½ cups (312 g) all-purpose flour, 2 tablespoons (15 g) cocoa powder, 1 teaspoon baking soda, and ½ teaspoon salt. Set aside.
  3. In a large bowl, beat 1 cup (227 g) softened unsalted butter with ¾ cup (150 g) granulated sugar and ½ cup (100 g) packed brown sugar until light and fluffy (about 3-4 minutes).
  4. Beat in 2 large eggs one at a time, followed by 1 teaspoon vanilla extract, ¼ cup (60 ml) buttermilk, 1 teaspoon white vinegar, and 2 tablespoons red food coloring until the dough is evenly colored.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed or folding with a spatula just until combined. Avoid overmixing.
  6. Fold in 1 ½ cups (270 g) white chocolate chips gently until evenly distributed.
  7. Using a cookie scoop or tablespoon, drop dough balls onto prepared baking sheets about 2 inches apart.
  8. Bake for 10-12 minutes until edges are set but centers remain soft.
  9. Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
