  • 3/4 cup (150g) granulated sugar
  • 1/4 cup (50g) brown sugar
  • 2 large eggs, at room temperature
  • 1/4 cup (60g) sour cream (or plain yogurt as substitute)
  • 1 tsp vanilla extract
  • 1 3/4 cups (220g) all-purpose flour, sifted
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup (85g) chopped walnuts, toasted

Instructions

  1. Brown the butter: Place 1/2 cup (115g) unsalted butter in a medium skillet over medium heat. Stir frequently as it melts, foams, then turns golden brown with a nutty aroma (about 5–7 minutes). Remove from heat and transfer to a bowl to cool slightly.
  2. Toast the walnuts: Spread 3/4 cup (85g) chopped walnuts on a baking sheet and toast in a 350°F (175°C) oven for 5–7 minutes until fragrant. Set aside to cool.
  3. Prepare wet ingredients: In a large bowl, mash 3 ripe bananas until smooth but with a few small lumps (about 1 1/2 cups). Add the browned butter, 3/4 cup granulated sugar, 1/4 cup brown sugar, 2 large eggs, 1/4 cup sour cream, and 1 tsp vanilla extract. Stir gently until combined, do not overmix.
  4. Mix dry ingredients: In a separate bowl, whisk together 1 3/4 cups sifted all-purpose flour, 1 tsp baking soda, and 1/2 tsp salt.
  5. Combine wet and dry: Add the dry ingredients to the wet mixture in two additions. Fold gently with a spatula until just combined; a few streaks of flour are okay. Avoid overmixing.
  6. Fold in walnuts: Reserve a small handful for topping, then fold the rest into the batter evenly.
  7. Prepare the loaf pan: Grease a 9×5-inch loaf pan with butter and line with parchment paper if desired. Pour the batter in and smooth the top. Sprinkle the reserved walnuts on top.
  8. Bake: Place the loaf pan in a preheated 350°F (175°C) oven. Bake for 55–65 minutes, starting to check at 55 minutes. The bread is done when a toothpick inserted near the center comes out with moist crumbs (not wet batter).
  9. Cool: Remove from oven and set on a cooling rack for 15 minutes. Then gently remove the loaf from the pan and allow to cool completely before slicing.

Notes

Watch the butter closely when browning to avoid burning. Use very ripe bananas for best sweetness and moisture. Toast walnuts before adding for enhanced flavor and crunch. Fold batter gently to keep crumb tender. Tent with foil if walnuts brown too quickly during baking. Let bread cool completely before slicing to prevent crumbling.
