A creamy, cheesy spinach dip baked inside a toasted sourdough bread bowl, topped with a sour cream spider web design. This Halloween appetizer is both show-stopping and delicious, with a crispy bread bowl that stays crunchy for hours.

  • 1 large round sourdough bread loaf (about 1.5 pounds)
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • 8 ounces cream cheese (full-fat, softened)
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 1 cup frozen chopped spinach (thawed and squeezed dry)
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic (minced)
  • ¼ teaspoon red pepper flakes (optional)
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup sour cream (for spider web)
  • 1 small black olive (for spider, optional)

Instructions

  1. Preheat oven to 375°F (190°C). Using a serrated bread knife, cut a circle about 2 inches from the edge of the bread loaf top at a slight angle to create a lid. Set lid aside. Hollow out the inside of the bread loaf, leaving a 1-inch thick wall. Tear removed bread into 1-inch cubes (about 3-4 cups). Place bread bowl and cubes on a parchment-lined baking sheet.
  2. In a small bowl, mix olive oil, garlic powder, and salt. Brush inside of bread bowl and toss bread cubes with the mixture. Toast for 8-10 minutes until golden and lightly crispy.
  3. While bread toasts, thaw frozen spinach (microwave 2-3 minutes if needed). Place spinach in a clean kitchen towel or paper towels and squeeze out all excess water until almost dry.
  4. In a large mixing bowl, combine softened cream cheese, sour cream, and mayonnaise. Mix until smooth. Add squeezed-dry spinach, mozzarella, Parmesan, minced garlic, red pepper flakes (if using), salt, and black pepper. Stir until evenly distributed. Mixture should be thick and scoopable.
  5. Reduce oven temperature to 350°F (175°C). Spoon dip mixture into toasted bread bowl, pressing down gently. Mound slightly above rim.
  6. Spoon remaining ¼ cup sour cream into a piping bag or zip-top bag. Snip off a tiny corner. Pipe a spiral of sour cream on top of the dip, starting from center and working outward. Using a toothpick or knife tip, drag lines from center outward through the sour cream spiral to create a web pattern (about 8 lines like spokes).
  7. Bake at 350°F for 20-25 minutes until dip is hot and bubbly and cheese is melted. If top browns too quickly, tent loosely with aluminum foil after 15 minutes. Place toasted bread cubes on baking sheet around bowl for last 5 minutes to re-warm.
  8. Remove from oven. Let cool 5 minutes. Place black olive spider on web (use one whole olive for body, slice another into thin legs). Serve immediately with toasted bread cubes and additional dippers.

Notes

Dry spinach thoroughly to prevent watery dip. Room temperature cream cheese is essential for smooth mixing. Pre-toasting the bread bowl creates a moisture barrier that keeps it crispy. Pipe the sour cream web right before baking. Let dip rest 5 minutes before serving to set.
