  • 2 large eggs, room temperature
  • 1/2 cup vegetable oil (or melted coconut oil)
  • 1/4 cup water (or strong brewed coffee)
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • Orange gel food coloring (e.g., Wilton’s Orange)
  • Optional: 1/8 teaspoon orange extract
  • Optional: Candy eyeballs for decoration
  • Optional: Black decorating gel
  • Optional: Orange and black sprinkles

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper, leaving overhang on two sides. Lightly spray with non-stick spray.
  2. In a large bowl, combine brownie mix, eggs, oil, and water. Stir until just combined (about 30-40 strokes). Do not overmix.
  3. In a separate bowl, beat softened cream cheese with an electric mixer on medium speed until smooth and fluffy (about 2 minutes). Add sugar and beat for another minute. Add egg yolk and vanilla extract, beating just until combined. Scrape down sides.
  4. Add orange gel food coloring one drop at a time, mixing after each drop, until bright pumpkin orange (about 8-10 drops).
  5. Spread about two-thirds of the brownie batter evenly into the prepared pan.
  6. Dollop the orange cream cheese mixture over the brownie batter in spoonfuls, spacing them evenly. Do not spread.
  7. Drop remaining brownie batter in spoonfuls over the cream cheese layer. Do not spread.
  8. Use a butter knife or toothpick to gently drag through the batter in a figure-eight or back-and-forth motion (6-8 passes). Do not over-swirl.
  9. Bake for 28-32 minutes. Edges should be set and slightly pulling away from sides; center should look slightly underdone. A toothpick inserted into center should come out with a few moist crumbs.
  10. Cool completely in the pan on a wire rack (about 1.5-2 hours). Lift out using parchment overhang. Add candy eyes or other decorations while slightly warm or use black decorating gel as glue when cool.
  11. Slice into squares using a sharp knife, wiping clean between cuts. Makes 12 large or 24 small squares.

Notes

For best results, ensure cream cheese is truly softened (leave out for at least 30 minutes). Use gel food coloring, not liquid, to avoid a watery swirl. Do not over-swirl—6 gentle passes is plenty. Brownies taste even better the next day. Store in an airtight container at room temperature for up to 3 days or refrigerate for up to 5 days. Freeze individual squares wrapped tightly for up to 3 months.
