Spooky Easy Severed Finger Sausage Rolls for Halloween Dinner

These spooky sausage rolls are shaped like severed fingers with almond fingernails and a ketchup-jam ‘blood’ drizzle. They’re quick, easy, and perfect for a fun Halloween dinner that kids and adults will love.

Ingredients

  • 1 sheet frozen puff pastry, thawed
  • 6 cocktail sausages or small hot dogs
  • 1 large egg, beaten
  • 12 whole almonds, skin on
  • 2 tablespoons ketchup
  • 1 tablespoon strawberry jam or jelly
  • 1 teaspoon water
  • Flaky sea salt, for sprinkling (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a small bowl, stir together the ketchup, strawberry jam, and water until the jam is mostly dissolved. Set aside.
  3. On a lightly floured surface, unfold the thawed puff pastry. Cut it lengthwise into 6 even strips, each about 1.5 inches wide.
  4. Place one cocktail sausage at one end of a pastry strip. Roll the pastry around the sausage, leaving about a half-inch of the sausage exposed at one end. Pinch the seam to seal. Repeat with all 6 sausages.
  5. Gently squeeze and roll each wrapped sausage between your palms to create an uneven, finger-like shape. Use the back of a knife to press a few shallow lines into the pastry to simulate knuckle creases.
  6. Brush a tiny bit of the beaten egg wash onto the exposed end of the sausage. Press a whole almond, pointed end facing outward, onto the egg wash. Press firmly to secure.
  7. Place the assembled fingers on the prepared baking sheet. Brush the entire pastry surface with the beaten egg wash. Sprinkle a tiny pinch of flaky sea salt over each one if desired.
  8. Dip a clean finger or the back of a spoon into the ketchup-jam mixture and carefully drizzle or smear a small amount around the ‘cut’ end of the finger (near the almond) and along the knuckle lines.
  9. Bake for 15-18 minutes, until the pastry is puffed and golden brown and the sausages are cooked through.
  10. Let the fingers rest on the baking sheet for 2-3 minutes before transferring to a serving platter. Serve warm.

Notes

For a vegetarian version, swap sausages for vegetarian cocktail sausages or cheese sticks. For gluten-free, use gluten-free puff pastry and gluten-free sausages. The almond fingernails are naturally gluten-free. To make ahead, assemble the fingers up to a day in advance and refrigerate. Add the ‘blood’ just before baking. Unbaked fingers can be frozen for up to a month; bake from frozen, adding 3-5 minutes to the cooking time.
