  • ⅓ cup (65 g) granulated sugar (for coating)
  • 2 teaspoons ground cinnamon (for coating)

Instructions

  1. Preheat your oven to 375°F (190°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, whisk together flour, baking soda, cream of tartar, and salt. Set aside.
  3. In a large bowl, beat softened butter with granulated sugar on medium speed for 3 to 4 minutes until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition. Then add vanilla extract and mix until combined.
  5. Gradually add the flour mixture to the wet ingredients, mixing on low speed just until incorporated. Avoid overmixing.
  6. In a small bowl, stir together granulated sugar and ground cinnamon for the coating.
  7. Using a cookie scoop or spoon, scoop dough balls (about 1.5 tablespoons or 30 g each). Roll each ball in the cinnamon sugar mixture until fully coated.
  8. Place dough balls about 2 inches apart on baking sheets.
  9. Bake for 9 to 11 minutes until edges are set but centers are still slightly soft and puffy.
  10. Transfer cookies to a cooling rack after a few minutes on the sheet to prevent sogginess. Let cool completely.
