  • 6 bone-in, skin-on chicken thighs (about 3 pounds)
  • 1.5 pounds baby potatoes, halved or quartered
  • 4 cloves garlic, minced
  • 3/4 cup grated parmesan cheese (divided: 1/4 cup for potatoes, 1/2 cup for topping)
  • 2 tablespoons unsalted butter, melted (plus 2 tablespoons cold butter for topping)
  • 1 tablespoon olive oil
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme blend)
  • 1/2 cup chicken broth
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Wash and halve about 1.5 pounds of baby potatoes. Toss them in a mixing bowl with 2 tablespoons melted butter, 1/4 cup grated parmesan, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Set aside.
  2. Pat dry 6 bone-in, skin-on chicken thighs. Season both sides with salt, pepper, and 1 teaspoon dried Italian herbs.
  3. Optional: In a small skillet, heat 1 tablespoon olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant but not browned.
  4. Spread the seasoned potatoes evenly on the bottom of the slow cooker. Place the chicken thighs skin-side up on top of the potatoes.
  5. Pour the sautéed garlic and olive oil evenly over the chicken and potatoes. Add 1/2 cup chicken broth around the edges.
  6. Sprinkle 1/2 cup grated parmesan over the chicken and potatoes. Dab the top with a few small pieces of cold butter (about 2 tablespoons).
  7. Cover and cook on low for 5 to 6 hours or on high for 3 to 4 hours. Check at 5 hours; chicken should be tender and juices run clear, potatoes soft but intact.
  8. Once cooked, sprinkle chopped fresh parsley over the top. For crispier skin, broil chicken for 3-4 minutes, watching closely to avoid burning.

Notes

Do not stir during cooking to keep chicken skin-side up and potatoes intact. Sautéing garlic is optional but recommended for better flavor. Use bone-in, skin-on thighs for juiciness and flavor. Broil after cooking for crispy skin. Adjust cooking time if using boneless thighs. Leftovers keep well refrigerated for up to 3 days and can be frozen for up to 2 months.
