  • 1.5 pounds smoked sausage or kielbasa, sliced into 1-inch rounds
  • 1.5 pounds baby potatoes, halved or quartered
  • 2 bell peppers, any color, cut into 1-inch chunks
  • 1 large red onion, cut into 1-inch wedges
  • 2 cups broccoli florets, cut into bite-sized pieces
  • 3 tablespoons olive oil, divided
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper
  • Optional: fresh parsley or basil for garnish

Instructions

  1. Preheat your oven to 425°F (220°C). Position the rack in the middle of the oven.
  2. Prep your vegetables: Wash the baby potatoes and cut any larger ones in half or quarters so they’re all roughly the same size—about 1 inch. Cut the bell peppers into 1-inch chunks, removing seeds and membranes. Cut the red onion into 1-inch wedges, keeping the root end intact so the layers hold together. Cut the broccoli into bite-sized florets.
  3. Slice the sausage: Cut the smoked sausage into 1-inch rounds on a slight diagonal.
  4. Season everything: In a large mixing bowl, combine the potatoes, bell peppers, onion, broccoli, and sliced sausage. Drizzle with 3 tablespoons of olive oil. Add the minced garlic, dried oregano, smoked paprika, salt, and pepper. Toss everything together with your hands or a spatula until every piece is evenly coated.
  5. Arrange on the sheet pan: Spread everything in a single, even layer on your prepared sheet pan. Make sure nothing is overlapping too much.
  6. Roast for 20-25 minutes: Place the pan in the preheated oven and let it cook undisturbed for 15 minutes. Then, remove the pan and use a spatula to flip everything over. Return to the oven and roast for another 10-15 minutes, until the sausage is browned and the vegetables are tender and caramelized. The potatoes should be easily pierced with a fork, and the broccoli should have some charred edges.
  7. Let it rest: Remove the pan from the oven and let it sit for 5 minutes before serving.
  8. Garnish and serve: Sprinkle with fresh parsley or basil if you have it.

Notes

For extra-crispy results, preheat the empty sheet pan in the oven while it preheats. Cut vegetables into uniform sizes for even cooking. Don’t overcrowd the pan to ensure caramelization instead of steaming. You can prep ingredients up to 24 hours in advance. Leftovers keep in the refrigerator for up to 4 days or freeze for up to 3 months.
