  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  • ¼ cup water
  • 1 large bag (1416 oz) restaurant-style tortilla chips
  • 2 cups shredded Mexican blend cheese (or sharp cheddar, freshly shredded)
  • 1 can (15 oz) black beans, drained and rinsed
  • ½ cup pickled jalapeños
  • ½ cup sour cream
  • ½ cup pico de gallo or salsa fresca
  • 1 avocado, diced
  • ¼ cup chopped fresh cilantro
  • 2 green onions, sliced
  • Optional: hot sauce, cotija cheese, extra jalapeños

Instructions

  1. Preheat your oven to 400°F (200°C). Line your sheet pan with aluminum foil for easy cleanup.
  2. Cook the ground beef: Heat a large skillet over medium-high heat. Add the beef and break it apart with a spatula. Cook until browned, about 5-7 minutes. Drain excess fat. Add chili powder, cumin, smoked paprika, garlic powder, salt, pepper, and ¼ cup water. Stir and let simmer for 2 minutes until liquid thickens. Set aside.
  3. Layer the first round of chips: Spread half the tortilla chips evenly on the sheet pan. Sprinkle half the black beans, half the cooked beef, half the shredded cheese, and half the jalapeños over the chips.
  4. Add the second layer: Repeat with the remaining chips, beans, beef, cheese, and jalapeños.
  5. Bake for 10-12 minutes, until cheese is fully melted and edges of chips start to brown. Watch closely to avoid burning.
  6. Remove from oven. Immediately dollop sour cream in small spoonfuls across the top. Add pico de gallo, diced avocado, cilantro, and green onions.
  7. Serve immediately directly from the pan.
