Savory One-Pan Garlic Butter Shrimp Pasta

A quick and easy one-pan garlic butter shrimp pasta with burst cherry tomatoes, perfect for a comforting dinner with minimal cleanup.

  • 1 pound (450g) medium shrimp, peeled and deveined (fresh or thawed frozen)
  • 8 ounces (225g) linguine or spaghetti (any long pasta works – whole wheat is fine too)
  • 1 pint (about 300g) cherry tomatoes, halved
  • 4 tablespoons (about 60g) unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 ½ cups (360ml) low sodium chicken broth (or vegetable broth)
  • ½ cup (50g) grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (optional)
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Juice from half a lemon

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 ounces (225g) of pasta and cook according to package directions until al dente, usually 8-10 minutes. Reserve ½ cup (120ml) of pasta water before draining. Set pasta aside.
  2. Pat the shrimp dry with paper towels to ensure they sear properly. Season lightly with salt and pepper.
  3. In a large skillet over medium heat, melt 2 tablespoons (30g) of butter. Add minced garlic and cook for about 30 seconds until fragrant but not browned. Toss in the halved cherry tomatoes. Cook for 4-5 minutes, gently pressing some tomatoes with the back of a spoon to burst them, releasing their juices.
  4. Push tomatoes to the side and add the remaining 2 tablespoons (30g) butter. Add shrimp in a single layer and cook for 2-3 minutes per side until pink and opaque. Avoid overcrowding; cook in batches if needed.
  5. Lower the heat to medium-low. Add the cooked pasta to the skillet along with the reserved pasta water and chicken broth. Toss gently to combine all ingredients, letting the pasta soak up the flavorful sauce for 2-3 minutes.
  6. Stir in grated Parmesan cheese and lemon juice. Taste and adjust seasoning with salt, pepper, and a pinch of red pepper flakes if using. Toss again to blend everything well.
  7. Remove from heat and sprinkle chopped fresh parsley over the top. Serve immediately with extra Parmesan on the side.

Notes

If sauce gets too thick, add more broth or reserved pasta water. Avoid overcooking shrimp to prevent rubberiness. For dairy-free, substitute butter with olive oil and omit Parmesan or use dairy-free cheese. Gluten-free pasta or spiralized zucchini noodles can be used as alternatives.
