  • 1 cup canned artichoke hearts, chopped and drained
  • 2 cloves garlic, minced
  • 1 tsp lemon zest
  • ½ tsp salt
  • ¼ tsp black pepper
  • Optional: pinch of crushed red pepper flakes

Instructions

  1. If using frozen spinach, thaw completely and squeeze out as much moisture as possible using a clean kitchen towel or paper towels. Drain and chop the canned artichoke hearts finely to avoid large chunks.
  2. In a mixing bowl, combine the softened cream cheese and mayonnaise. Use an electric mixer or whisk vigorously until the mixture is smooth and fluffy.
  3. Stir in the grated Parmesan, shredded mozzarella, minced garlic, lemon zest, salt, and pepper. Mix just until combined.
  4. Gently fold the drained spinach and chopped artichokes into the cheese mixture with a spatula, being careful not to overmix.
  5. Scrape the mixture into an 8×8-inch baking dish, smoothing the top with a spatula.
  6. Preheat oven to 375°F (190°C). Bake the dip for 20-25 minutes until the top is golden and bubbly. For a crispier top, broil for 1-2 minutes watching closely.
