A simple and festive layered cocktail featuring vibrant red raspberry syrup, creamy coconut white layer, and a fizzy blue curaçao top, perfect for patriotic summer parties.

Ingredients

Scale
  • 1 cup fresh or frozen raspberries
  • 1/3 cup granulated sugar
  • 1/2 cup water
  • 2 oz (60 ml) vodka
  • 3 oz (90 ml) coconut cream
  • 1 oz (30 ml) simple syrup
  • 1/4 tsp vanilla extract
  • 2 oz (60 ml) white rum
  • 2 oz (60 ml) blue curaçao
  • 2 oz (60 ml) lemon-lime soda
  • Ice cubes
  • Fresh raspberries and blueberries (optional garnish)
  • Mint leaves (optional garnish)

Instructions

  1. Make the Raspberry Syrup (10 minutes): In a small saucepan, combine raspberries, sugar, and water. Cook over medium heat, stirring occasionally until the raspberries break down and the sugar dissolves (about 7 minutes). Strain through a fine mesh sieve to remove seeds. Let cool completely.
  2. Prepare the Red Layer: Mix 2 oz (60 ml) vodka with 2 oz (60 ml) raspberry syrup. Fill your glass about one-third full with this mixture. Add a few ice cubes carefully. Set aside.
  3. Make the White Layer: In a shaker or small bowl, combine coconut cream, simple syrup, vanilla extract, and white rum. Stir gently until smooth.
  4. Layer the White: Slowly pour the white mixture over the back of a spoon held just above the red layer. Pouring gently lets the white layer float above the red without mixing. Add a few ice cubes to help separate layers.
  5. Prepare and Add the Blue Layer: In a separate glass, mix blue curaçao and lemon-lime soda. Slowly pour over the back of a spoon onto the white layer to create the blue top layer.
  6. Garnish: Add fresh raspberries, blueberries, and a sprig of mint on top. Serve immediately with a straw or stirrer.

Notes

Pour each layer slowly over the back of a spoon to keep layers distinct. Chill all liquids beforehand and add ice cubes between layers to prevent mixing. Raspberry syrup can be made ahead and stored in the fridge for up to a week. For a non-alcoholic version, substitute spirits with flavored sparkling waters and use coconut milk for the white layer.
