  • 3 large fresh limes, juiced (about ½ cup or 120 ml lime juice)
  • 4 cups (960 ml) sparkling water
  • ½ cup (120 ml) cherry syrup (e.g., Torani or homemade)
  • 1520 fresh mint leaves, gently muddled
  • 12 tablespoons granulated sugar or simple syrup (optional, depending on cherry syrup sweetness)
  • Ice cubes
  • Optional: fresh cherries for garnish

Instructions

  1. Roll each lime on the counter to soften, then cut in half and juice to get about ½ cup (120 ml) fresh lime juice.
  2. Place fresh mint leaves at the bottom of a pitcher and gently muddle with a muddler or wooden spoon to release oils and aroma without bitterness.
  3. Add cherry syrup and optional sugar or simple syrup to the pitcher and stir gently until dissolved.
  4. Pour in the fresh lime juice and stir to combine with the mint and syrup mixture.
  5. Fill the pitcher halfway with ice cubes to chill the mixture.
  6. Slowly add 4 cups (960 ml) sparkling water and stir gently to combine without losing fizz.
  7. Taste and adjust sweetness or lime by adding more syrup or lime juice if needed.
  8. Pour into glasses over fresh ice, garnish with a sprig of mint and a cherry if desired, and serve immediately.

Notes

Do not over-muddle the mint to avoid bitterness. Use fresh lime juice for best flavor. Stir sparkling water gently to preserve fizz. Adjust sweetness to taste. Keep sparkling water cold before mixing. For a sugar-free version, use sugar substitutes or reduce syrup. Mint can be spearmint or peppermint. Optional garnish with fresh cherries. Store lime and cherry mixture separately from sparkling water for up to 24 hours.
