These Quick Monster Eyeball Caprese Skewers are a fun and easy Halloween appetizer made with fresh mozzarella, cherry tomatoes, basil, black olives, and balsamic glaze. Ready in just 10 minutes, they’re perfect for last-minute parties and guaranteed to be a crowd-pleaser.

  • 8 ounces fresh mozzarella balls (ciliegine), drained and patted dry
  • 1 pint cherry tomatoes (about 2024 tomatoes)
  • 2024 medium-sized fresh basil leaves
  • 2024 large pitted black olives, drained and patted dry
  • 23 tablespoons balsamic glaze (reduction)
  • 1/2 teaspoon red pepper flakes, crushed slightly (optional)
  • 1 tablespoon extra virgin olive oil
  • 1/4 teaspoon flaky sea salt

Instructions

  1. Prep your ingredients: Drain the mozzarella balls and pat them dry with paper towels. Rinse the cherry tomatoes and basil leaves, then pat those dry too. Drain the black olives and lay them on a paper towel to remove excess brine.
  2. Assemble the ‘eyeball’ base: Take one basil leaf and wrap it around one mozzarella ball. Place a cherry tomato next to the wrapped mozzarella ball on your cutting board.
  3. Skewer everything together: Take a toothpick or short skewer. Push it through the center of the black olive first, then through the basil-wrapped mozzarella ball, and finally through the cherry tomato. Repeat for all 20-24 skewers. Space them about 2 inches apart on your serving platter.
  4. Create the ‘bloodshot’ effect: In a small bowl, mix the balsamic glaze with the crushed red pepper flakes. Using a spoon or squeeze bottle, drizzle a tiny amount over each skewer, focusing on the area where the tomato meets the mozzarella.
  5. Finish and serve: Drizzle the extra virgin olive oil over the entire platter. Sprinkle with flaky sea salt. Arrange the skewers so they’re pointing in different directions. Serve immediately or refrigerate for up to 2 hours before serving.

Notes

For best results, keep mozzarella cold but pat dry just before assembling. Use large olives that match the diameter of the mozzarella balls. Assemble up to 4 hours ahead, but add balsamic glaze and olive oil just before serving. For a dairy-free version, use vegan mozzarella balls. For a spicier version, add a thin slice of jalapeño between the tomato and mozzarella.
