Quick Garlic Butter Steak Bites with Mashed Potatoes

Tender, juicy steak bites seared to perfection and coated in a rich garlic butter sauce, served over creamy mashed potatoes. This quick and easy weeknight dinner comes together in under 30 minutes and tastes like comfort food at its finest.

  • 1 ½ pounds sirloin steak, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper, freshly ground
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh parsley, chopped for garnish
  • 2 pounds Yukon Gold potatoes, peeled and quartered
  • 4 tablespoons unsalted butter, softened
  • ½ cup whole milk, warmed
  • 1 teaspoon salt
  • ¼ teaspoon white pepper

Instructions

  1. Peel and quarter the Yukon Gold potatoes. Place them in a medium saucepan and cover with cold water by about an inch. Add a generous pinch of salt. Bring to a boil over high heat, then reduce to a simmer and cook until fork-tender, about 12-15 minutes.
  2. While the potatoes cook, pat the steak cubes dry with paper towels. Season generously with salt, pepper, and dried thyme. Toss to coat evenly.
  3. Heat the olive oil in a cast-iron skillet over medium-high heat until it shimmers. Carefully add the steak cubes in a single layer. Let them sear undisturbed for 2-3 minutes until a deep brown crust forms. Flip and cook for another 2-3 minutes for medium-rare. Transfer the cooked steak to a plate and tent loosely with foil.
  4. Reduce the heat to medium-low. Add 2 tablespoons of butter to the same skillet. Once melted, add the minced garlic and cook for 30 seconds until fragrant, stirring constantly. Add the remaining 2 tablespoons of butter and swirl until melted and combined.
  5. Return the steak bites to the skillet and toss them in the garlic butter sauce until evenly coated. Cook for another 30 seconds, just to warm them through. Remove from heat immediately.
  6. Drain the potatoes and return them to the pot. Add the softened butter and warm milk. Mash until you reach your desired consistency. Season with salt and white pepper. Taste and adjust as needed.
  7. Serve immediately: Spoon a generous portion of mashed potatoes onto each plate. Top with the garlic butter steak bites and drizzle any remaining butter sauce from the skillet over everything. Garnish with fresh parsley if desired.

Notes

Pat the steak dry for the best sear. Don’t overcrowd the pan—cook in batches if needed. Watch the garlic carefully as it burns quickly. Let the steak rest after searing for juicier bites. Mashed potatoes can be made up to 2 days ahead and reheated gently.
