  • 4 tablespoons (57 g) unsalted butter, divided
  • 4 large garlic cloves, minced
  • Fresh lemon juice from 1 medium lemon (about 2 tablespoons or 30 ml)
  • 2 tablespoons fresh dill, finely chopped
  • 1/4 cup (60 ml) heavy cream
  • Salt and black pepper to taste
  • 1 tablespoon (15 ml) olive oil
  • Optional garnish: lemon zest or extra dill sprigs

Instructions

  1. Pat the salmon fillets dry with paper towels to remove excess moisture. Season both sides with salt and freshly cracked black pepper. Let them sit at room temperature for 10 minutes while you prep the sauce.
  2. In a small bowl, combine 2 tablespoons softened butter, minced garlic, fresh lemon juice, chopped dill, and heavy cream. Stir well to blend. Set aside to allow flavors to meld while cooking.
  3. Place a 10-12 inch skillet over medium-high heat and add 1 tablespoon olive oil. Once shimmering (about 2 minutes), add the salmon fillets skin-side down. Press gently to keep skin flat.
  4. Sear the salmon for 4-5 minutes without moving, until the skin is crispy and releases easily from the pan. Flip the fillets carefully using a fish spatula.
  5. Add 2 tablespoons butter to the skillet along with 2 minced garlic cloves. Tilt the pan slightly and spoon the melted garlic butter over the salmon repeatedly for 1-2 minutes to baste.
  6. Cook the salmon on the flesh side for another 2-3 minutes, until just cooked through but still tender. Avoid overcooking.
  7. Arrange the salmon fillets on plates and spoon the lemon dill sauce over or beside them. Garnish with lemon zest or extra dill if desired.

Notes

Pat salmon dry before cooking to ensure crispy skin. Cook skin-side down longer for best texture. Add garlic butter after flipping and baste quickly to avoid burning garlic. Sauce can be made ahead and refrigerated. For dairy-free, substitute butter with olive oil and heavy cream with coconut or cashew cream.
