A quick and easy apple cider mimosa bar that’s perfect for fall brunches. With just a few simple ingredients, you can create a festive and crowd-pleasing drink station that looks impressive but takes zero effort.

  • 1 bottle (750 ml) chilled Brut Champagne or Prosecco
  • 2 cups (16 ounces) chilled apple cider (unfiltered, fresh pressed)
  • 46 cinnamon sticks (for garnish)
  • 1 apple (Honeycrisp or Gala), thinly sliced (for garnish)
  • Optional: maple syrup or honey (for rimming glasses)
  • Optional: ice (big cubes)

Instructions

  1. Chill everything: Place the Prosecco and apple cider in the fridge the night before, or in the freezer for about 20 minutes if you’re short on time.
  2. Prepare your garnishes: Wash and thinly slice the apple into rounds or half-moons. If prepping ahead, toss slices in a little lemon juice to prevent browning. Place cinnamon sticks in a small bowl.
  3. Set up your bar: Place the chilled Prosecco and a pitcher of apple cider on the counter or table. Arrange glasses, apple slices, and cinnamon sticks nearby. If rimming glasses, dip the rim in maple syrup, then into cinnamon sugar, and let dry.
  4. Assemble the drinks: Fill each glass about one-third full with apple cider. Slowly top off with Prosecco (pour gently down the side to minimize foam). The ratio is flexible; 1:2 cider to bubbles is a good starting point.
  5. Garnish and serve: Drop a thin apple slice into each glass and slide in a cinnamon stick. Serve immediately.

Notes

For best results, use a dry Brut Prosecco to balance the sweetness of the cider. Pour the cider first to prevent excessive foaming. Serve immediately as bubbles will dissipate. For a non-alcoholic version, substitute Prosecco with sparkling apple cider or dry ginger ale.
