  • 6 medium apples, peeled and sliced (about 2 pounds—mix Granny Smith and Honeycrisp)
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 cup granulated sugar
  • 1 cup old-fashioned rolled oats
  • 3/4 cup all-purpose flour
  • 1/2 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cut into small cubes

Instructions

  1. Make the salted caramel sauce: Place the granulated sugar in a medium saucepan over medium heat. Stir constantly with a wooden spoon until the sugar melts into a deep amber liquid, about 6 to 8 minutes. Remove from heat and immediately whisk in the butter pieces until melted and incorporated. Slowly pour in the heavy cream while whisking constantly. Whisk in the sea salt and vanilla extract. Set aside to cool.
  2. Preheat oven to 375°F (190°C). Peel and slice apples into 1/4-inch thick slices. Toss apple slices in a large bowl with flour, lemon juice, cinnamon, nutmeg, and granulated sugar until evenly coated.
  3. Spread the apple mixture evenly in a greased 9×9-inch baking dish. Pour about two-thirds of the salted caramel sauce over the apples and gently toss to distribute.
  4. Make the oat crumble topping: In a medium bowl, whisk together oats, flour, brown sugar, granulated sugar, cinnamon, and salt. Add cold butter cubes and cut in with a pastry cutter or fingertips until the mixture resembles coarse crumbs with some pea-sized butter pieces.
  5. Sprinkle the oat crumble evenly over the apples. Do not press down.
  6. Place the dish on a baking sheet. Bake uncovered for 35 minutes. Cover loosely with aluminum foil and bake for another 15 to 20 minutes, until apples are tender and topping is golden brown.
  7. Remove from oven and let cool for at least 10 minutes. Drizzle remaining caramel sauce over the top and sprinkle with extra flaky sea salt.

Notes

For best results, use a mix of Granny Smith and Honeycrisp apples. Keep butter very cold for the topping to ensure crispy clusters. Let the crisp rest for 10-15 minutes before serving to allow juices to thicken. Store covered in the refrigerator for up to 4 days.
