  • 4 medium carrots, peeled and cut into 2-inch chunks
  • 3 medium parsnips, peeled and cut into 2-inch chunks
  • 1 large sweet potato, peeled and cut into 1-inch cubes
  • 1 medium red onion, cut into wedges
  • 2 medium beets, peeled and cut into 1-inch cubes (optional)
  • 3 tablespoons olive oil
  • ¼ cup pure maple syrup
  • 2 tablespoons fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 4 cloves garlic, minced
  • Salt and black pepper to taste
  • 1 tablespoon balsamic vinegar (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper if desired.
  2. Wash, peel, and cut all vegetables into uniform pieces: carrots and parsnips into 2-inch chunks, sweet potatoes and beets into 1-inch cubes, and red onion into wedges.
  3. In a small bowl, whisk together olive oil, maple syrup, chopped rosemary, thyme, minced garlic, salt, and pepper.
  4. Place all chopped vegetables in a large mixing bowl. Pour the maple mixture over them and toss well until evenly coated.
  5. Spread the vegetables in a single layer on the prepared baking sheet, ensuring they are not overcrowded.
  6. Roast for 20 minutes, then remove the pan and flip the vegetables with a spatula or tongs.
  7. Return to the oven and roast for another 15-20 minutes, until vegetables are tender and golden brown with crispy edges.
  8. Remove from oven. If using balsamic vinegar, drizzle over hot vegetables and toss gently. Adjust seasoning with salt and pepper if needed. Serve hot, warm, or at room temperature.

Notes

For extra crispy edges, preheat the baking sheet in the oven before adding the vegetables. If using beets, chop them last to avoid staining. Store leftovers in an airtight container in the refrigerator for up to 5 days. Reheat in a 350°F oven for about 10 minutes to restore crispiness.
