  • 3 pounds sweet potatoes (about 45 medium), peeled and cut into 2-inch chunks
  • 1/4 cup unsalted butter, melted
  • 1/4 cup whole milk (or heavy cream for extra richness)
  • 2 large eggs, lightly beaten
  • 1/4 cup packed light brown sugar
  • 2 tablespoons pure maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup pecan halves, roughly chopped
  • 1/2 cup all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/4 cup unsalted butter, cold and cut into small cubes
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Place the peeled and chopped sweet potatoes in a large pot and cover them with cold water by about an inch. Add a generous pinch of salt. Bring to a boil over high heat, then reduce to a simmer and cook for 15-20 minutes, until the potatoes are fork-tender. Drain them well in a colander.
  2. Transfer the drained sweet potatoes to a large mixing bowl. Mash them with a potato masher until mostly smooth, then switch to a hand mixer on low speed for about 30 seconds if you want them silky. Add the melted butter, milk, beaten eggs, brown sugar, maple syrup, vanilla, cinnamon, nutmeg, and salt. Mix on low until everything is combined and smooth.
  3. In a medium bowl, combine the flour, brown sugar, cinnamon, and salt. Add the cold butter cubes. Use a pastry cutter or two forks to cut the butter into the dry ingredients until the mixture looks like coarse sand with some pea-sized butter pieces remaining. Stir in the chopped pecans. Refrigerate the streusel while you assemble the base.
  4. Preheat your oven to 350°F (175°C). Lightly grease your 9×13-inch baking dish with butter or nonstick spray. Spread the sweet potato mixture evenly in the dish. Sprinkle the pecan streusel evenly over the top, covering every bit of the sweet potato. Don’t press it down.
  5. If baking immediately, place the dish on the middle rack and bake for 35-40 minutes, until the streusel is golden brown and the edges are bubbly. Let it rest for 10 minutes before serving. If making ahead, cover the assembled casserole tightly with plastic wrap or foil and refrigerate for up to 24 hours. When ready to bake, remove from fridge while oven preheats (about 20 minutes). Notes

For the crunchiest streusel, ensure the butter is very cold and toast the pecans first. Let the casserole rest for 10 minutes after baking to allow the filling to set. If making ahead, keep the streusel separate and add just before baking for best results. The casserole can be frozen unbaked for up to 3 months.
