This loaded buffalo chicken dip is perfectly creamy, not greasy, with a double dose of buffalo sauce and plenty of tender chicken. It’s the ultimate crowd-pleaser for game day and parties.

  • 3 cups cooked, shredded chicken
  • 16 oz cream cheese, softened
  • 1 cup Frank’s RedHot Original Cayenne Pepper Sauce
  • 1/2 cup ranch dressing
  • 1/2 cup sour cream
  • 2 cups shredded mozzarella cheese
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup crumbled blue cheese, plus more for topping
  • 45 green onions, sliced

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Cut cream cheese into cubes and let sit at room temperature for 20-30 minutes until very soft.
  3. In a large mixing bowl, combine softened cream cheese, Frank’s RedHot, ranch dressing, and sour cream. Beat with a hand mixer or sturdy spatula until smooth and homogenous.
  4. Fold in shredded mozzarella, sharp cheddar, crumbled blue cheese, and shredded chicken. Stir until everything is well coated.
  5. Spoon the mixture into the prepared baking dish and spread into an even layer.
  6. Bake for 20-25 minutes, until hot and bubbly around the edges and the top is just starting to turn light golden brown.
  7. Remove from oven and let rest for 5 minutes. Top with additional crumbled blue cheese and sliced green onions. Serve immediately.

Notes

For best results, use room temperature cream cheese and shred your own cheese from blocks. Avoid overcooking to prevent greasy separation. The dip can be assembled up to 24 hours ahead and refrigerated; add 5-10 minutes to baking time if starting cold.
