  • 1 ¾ cups (350g) granulated sugar
  • 4 large eggs, room temperature
  • 1 cup (240ml) buttermilk, room temperature
  • ½ cup (120ml) fresh orange juice
  • Zest from 2 medium oranges
  • 1 teaspoon vanilla extract
  • ¾ cup (about 120g) confetti sprinkles (rainbow, baking stable)
  • For the Orange Citrus Buttercream:
  • 1 cup (226g) unsalted butter, softened
  • 34 cups (360-480g) powdered sugar, sifted
  • 2 tablespoons (30ml) fresh orange juice
  • 1 teaspoon fresh orange zest
  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 8-inch round cake pans and dust with flour or line with parchment paper.
  2. In a medium bowl, sift together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar on medium speed until pale and fluffy, about 4-5 minutes.
  4. Add eggs one at a time, beating well after each addition.
  5. Mix in vanilla extract, fresh orange juice, and orange zest.
  6. Reduce mixer speed to low. Alternately add dry ingredients and buttermilk in three parts, starting and ending with dry ingredients. Mix just until combined.
  7. Gently fold in confetti sprinkles with a rubber spatula, being careful not to overmix.
  8. Divide batter evenly between prepared pans and bake for 28-32 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool cakes in pans for 10 minutes, then invert onto wire racks to cool completely.
  10. For the buttercream, beat softened butter until creamy, about 2-3 minutes. Gradually add powdered sugar on low speed.
  11. Add orange juice, orange zest, vanilla extract, and salt. Beat on medium-high for 3-4 minutes until light and fluffy. Adjust consistency with more powdered sugar or juice if needed.
  12. Assemble cake by spreading buttercream on one layer, topping with second layer, then frosting top and sides evenly. Garnish with sprinkles or thin orange slices if desired.

Notes

Toss sprinkles in a teaspoon of flour before folding into batter to prevent sinking. Use softened butter at room temperature for best creaming. Room temperature eggs blend better. Avoid overmixing to prevent tough cake and color bleeding. Adjust buttercream consistency with powdered sugar or orange juice. Chill buttercream if kitchen is warm to prevent slipping.
