A quick and easy vanilla-chocolate layered cake with a fun sports-themed buttercream design, perfect for celebrating graduations and sports fans.

  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup (227g) unsalted butter, softened
  • 2 cups (400g) granulated sugar
  • 4 large eggs, room temperature
  • 1 cup (240ml) whole milk, room temperature (can substitute almond milk)
  • 2 teaspoons pure vanilla extract
  • ½ cup (50g) cocoa powder (optional for chocolate layers)
  • 1 cup (227g) unsalted butter, softened (for buttercream)
  • 4 cups (480g) powdered sugar, sifted
  • 23 tablespoons (30–45ml) heavy cream
  • 1 teaspoon pure vanilla extract (for buttercream)
  • Gel food coloring, assorted colors
  • Edible markers (optional)
  • Sprinkles or edible glitter (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 8-inch round cake pans or line with parchment paper.
  2. In a medium bowl, sift together flour, baking powder, and salt. Set aside.
  3. Using a mixer on medium speed, beat 1 cup softened unsalted butter with granulated sugar until light and fluffy, about 4-5 minutes.
  4. Add eggs one at a time, beating well after each addition. Mix in 2 teaspoons vanilla extract.
  5. Reduce mixer speed to low. Add flour mixture in three parts, alternating with milk, starting and ending with flour. Mix until just combined.
  6. Optional: Divide batter in half and stir cocoa powder into one half for chocolate layers.
  7. Pour batter evenly into prepared pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  8. Remove cakes from pans and cool completely on cooling racks, about 1 hour.
  9. Make buttercream: Beat 1 cup softened unsalted butter until creamy. Gradually add powdered sugar, mixing on low then high speed until fluffy.
  10. Add heavy cream and 1 teaspoon vanilla extract. Adjust consistency by adding more cream or sugar as needed.
  11. Divide buttercream into small bowls and tint with gel food coloring for sports-themed designs.
  12. Level cake layers if needed. Place one layer on serving plate or turntable. Spread a thick layer of buttercream, then top with second layer.
  13. Apply a thin crumb coat over entire cake and chill for 20 minutes to set.
  14. Apply final smooth layer of buttercream. Use piping bags with round or star tips to pipe sports details like stitching or panels.
  15. Use edible markers for finer lines if desired.

Notes

Use gel food coloring to keep buttercream thick for piping. Chill buttercream if too soft while decorating. Level cake layers for easier decorating. Practice piping on parchment paper before decorating cake. Store leftover cake covered in fridge up to 4 days; freeze layers before assembly for up to 2 months.
