Instructions

  1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. Make the cream cheese filling: In a medium bowl, beat the softened cream cheese with an electric mixer until smooth and fluffy, about 2 minutes. Add the sugar, egg yolk, and vanilla, then beat until well combined. Set aside.
  3. Whisk the dry ingredients together: In a large bowl, combine the flour, baking soda, baking powder, salt, and pumpkin pie spice. Whisk until evenly distributed.
  4. Mix the wet ingredients: In a separate medium bowl, whisk together the pumpkin puree, oil, brown sugar, granulated sugar, eggs, and vanilla extract until smooth and glossy.
  5. Combine wet and dry ingredients: Pour the wet mixture into the dry ingredients and fold together with a rubber spatula until just combined (a few lumps are fine). Do not overmix.
