A quick and easy baked brie wrapped in flaky puff pastry, topped with a spicy-sweet hot honey drizzle and crunchy toasted walnuts. Perfect for entertaining and impressing guests with minimal effort.

  • 1 (8-ounce) wheel of brie cheese, room temperature
  • 1 sheet puff pastry (8x8 inches), thawed but cold
  • 1/3 cup toasted walnuts, roughly chopped
  • 2 tablespoons hot honey, or more to taste
  • 1 large egg beaten with 1 tablespoon water (egg wash)
  • Optional: 1 teaspoon fresh thyme leaves

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toast 1/3 cup walnuts in a dry skillet over medium heat, stirring frequently for 3-5 minutes until fragrant and golden. Remove and let cool.
  3. Roll out the thawed puff pastry sheet lightly on a floured surface to smooth creases (about 10×10 inches). Trim edges if needed to create a neat square.
  4. Place the brie in the center of the puff pastry. Sprinkle thyme leaves over the brie if using.
  5. Sprinkle toasted walnuts on top of the brie, reserving a few for garnish.
  6. Drizzle about 1 tablespoon of hot honey over the walnuts and brie.
  7. Fold the puff pastry corners up and over the cheese, sealing edges by pressing gently and trimming excess dough if needed. Use egg wash to help seal if dough feels dry.
  8. Brush the entire pastry with egg wash for a golden, shiny finish.
  9. Score the pastry lightly with a knife to allow steam to escape and add decoration.
  10. Bake for 20-25 minutes until puff pastry is golden brown and crisp.
  11. Remove from oven and let rest for 5 minutes.
  12. Drizzle remaining hot honey and sprinkle reserved toasted walnuts on top before serving.

Notes

Keep puff pastry cold to prevent stickiness. If pastry browns too fast before cheese melts, tent loosely with foil. Let brie come to room temperature before baking for even melting. Toast walnuts to enhance flavor. Avoid overfilling to prevent sogginess. Leftovers can be refrigerated up to 2 days and reheated gently in oven.
