These flavorful sliders combine smoky bacon, melty cheddar cheese, and tangy pickled jalapeños for a quick and indulgent meal perfect for gatherings or busy weeknights.

  • 1 pound (450 grams) ground beef, 80/20 blend
  • 6 slices sharp cheddar cheese
  • 6 slices bacon, cooked until crispy
  • 6 small slider buns, preferably brioche
  • Salt and freshly ground black pepper
  • 3 medium fresh jalapeños, thinly sliced
  • 1/2 cup (120 ml) white vinegar
  • 1/2 cup (120 ml) water
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 garlic clove, smashed
  • Mayonnaise or chipotle mayo (optional)
  • Leafy lettuce or arugula (optional)
  • Tomato slices (optional)

Instructions

  1. Make the Pickled Jalapeños: Combine 1/2 cup white vinegar, 1/2 cup water, 1 tablespoon sugar, 1 teaspoon salt, and a smashed garlic clove in a small saucepan. Bring to a simmer until sugar dissolves. Place sliced jalapeños in a jar, pour hot brine over them, and let cool to room temperature. Refrigerate for at least 30 minutes.
  2. Prepare the Bacon: In a skillet over medium heat, crisp up 6 bacon slices. Drain on paper towels and set aside. Reserve some bacon fat for cooking the patties.
  3. Season and Shape Patties: In a bowl, gently mix ground beef with about 1 teaspoon salt and 1/2 teaspoon black pepper. Divide into 6 equal portions (about 3 ounces each). Form into slightly oval patties matching slider buns in size.
  4. Cook the Patties: Heat a tablespoon of reserved bacon fat in the skillet over medium-high heat. Cook patties 3-4 minutes per side for medium or until desired doneness. Add a slice of cheddar cheese on each patty during the last minute to melt.
  5. Assemble the Sliders: Lightly toast slider buns. Spread mayo or chipotle mayo on bottom bun, add cheeseburger patty, a strip of bacon, a few pickled jalapeño slices, lettuce or arugula, and tomato if using. Top with the bun and serve warm.

Notes

Do not press down on patties while cooking to keep them juicy. Use bacon fat for cooking patties to add smoky flavor. Toast buns with a brush of melted butter for extra richness. Pickled jalapeños can be rinsed to reduce heat if desired. Store pickled jalapeños in fridge for up to 2 weeks. Leftover sliders keep well refrigerated for 2 days; reheat in oven to preserve bun texture.
