These lightened-up leftover turkey sliders combine tender turkey, herby stuffing, melted cheese, and a secret creamy sauce made with Greek yogurt and mayo. Perfect for post-Thanksgiving meals or any time you have leftover turkey, they come together in under 25 minutes and are a crowd-pleaser.

  • 1/4 cup light mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon garlic powder

  • 12 slider buns (e.g., Martin’s potato rolls)
  • 2 cups cooked turkey, shredded or chopped
  • 1 1/2 cups leftover stuffing (any variety)
  • 6 slices provolone or Swiss cheese (or 1 1/2 cups shredded mozzarella)
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon poppy seeds (optional)
  • 1/2 teaspoon dried parsley

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with cooking spray or butter.
  2. Make the creamy sauce: In a small bowl, combine Greek yogurt, light mayonnaise, Dijon mustard, apple cider vinegar, garlic powder, and a pinch of salt and pepper. Whisk until smooth. Taste and adjust seasoning if needed.
  3. Prepare the turkey: Shred or chop the turkey into bite-sized pieces. If dry, toss with 1 tablespoon of the sauce.
  4. Slice the slider buns in half horizontally. Place the bottom half in the prepared baking dish.
  5. Spread half of the creamy sauce evenly over the bottom buns.
  6. Layer the shredded turkey evenly over the sauce.
  7. Spoon the leftover stuffing over the turkey, breaking up any large clumps.
  8. Top with cheese slices (tear slices in half and overlap for better coverage) or sprinkle shredded cheese evenly.
  9. Place the top buns over the cheese and press down gently.
  10. Spread the remaining sauce over the top buns.
  11. Brush the melted butter over the top buns. Sprinkle with poppy seeds and dried parsley if using.
  12. Cover the dish loosely with aluminum foil and bake for 15 minutes.
  13. Remove the foil and bake for another 5-7 minutes, until the tops are golden brown and the cheese is bubbly.
  14. Let the sliders rest for 5 minutes before cutting. This allows the cheese to set.
  15. Cut between the buns with a sharp knife and serve warm, with extra sauce on the side if desired.

Notes

For best results, use full-fat or 2% Greek yogurt to avoid a watery sauce. If your stuffing is dry, add 2-3 tablespoons of chicken broth before assembling. Let the sliders rest for 5 minutes after baking to help them hold together. To make ahead, assemble completely but do not bake; cover and refrigerate for up to 24 hours, then add 5-7 minutes to the covered baking time. For freezing, assemble without baking, wrap tightly, and freeze for up to 3 months; thaw overnight in the fridge before baking.
