  • 1 teaspoon pure vanilla extract
  • 3 tablespoons (42g) unsalted butter (for brown butter swirl)
  • 4 ounces (113g) cream cheese, softened (full-fat block)
  • ½ cup (60g) powdered sugar, sifted if lumpy
  • ½ teaspoon pure vanilla extract (for swirl)
  • 1 tablespoon all-purpose flour (for swirl)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment paper, leaving 2 inches of overhang on the long sides.
  2. Brown the butter: Place 3 tablespoons unsalted butter in a small saucepan over medium heat. Cook, swirling occasionally, until it melts, foams, and turns amber with brown specks (about 4-5 minutes). Immediately pour into a heatproof bowl and set aside to cool slightly.
  3. In a medium bowl, whisk together 1 ¾ cups flour, 1 teaspoon baking soda, ½ teaspoon baking powder, 2 teaspoons pumpkin pie spice, 1 teaspoon cinnamon, and ½ teaspoon salt.
  4. In a large bowl, whisk together ¾ cup granulated sugar, ½ cup packed brown sugar, 1 cup pumpkin purée, ½ cup Greek yogurt, 2 eggs, ¼ cup vegetable oil, and 1 teaspoon vanilla extract until smooth.
  5. Pour dry ingredients into wet ingredients. Fold gently with a rubber spatula until just combined (a few lumps are fine). Do not overmix.
  6. Make the cream cheese swirl: In a small bowl, beat 4 ounces softened cream cheese with a hand mixer until smooth. Add the cooled brown butter (including brown bits), ½ cup powdered sugar, ½ teaspoon vanilla extract, and 1 tablespoon flour. Beat until silky and combined.
  7. Pour half the pumpkin batter into the prepared loaf pan. Drop spoonfuls of half the cream cheese mixture over the batter. Pour remaining pumpkin batter on top, then drop remaining cream cheese mixture in dollops. Use a toothpick or skewer to swirl in a figure-eight pattern (6-8 passes).
  8. Bake for 50-60 minutes. At 45 minutes, check and tent with foil if top is browning too quickly. Bread is done when a toothpick inserted in the center comes out clean or with a few moist crumbs (avoid cream cheese pockets).
  9. Cool in pan for 15 minutes, then lift out using parchment overhang and transfer to a wire rack. Cool completely (at least 1 hour) before slicing.

Notes

Don’t skip the flour in the cream cheese swirl—it prevents sinking. Room temperature ingredients are key for best texture. Watch the butter closely when browning; it goes from brown to burnt in about 30 seconds. Let the bread cool completely before slicing to avoid crumbling. The bread tastes even better on day two.
