Ingredients

Scale
  • 12 large eggs (room temperature)
  • Water for boiling
  • Ice for an ice bath
  • 1/4 cup plain Greek yogurt (full-fat or 2%)
  • 2 tablespoons mayonnaise (Duke’s or Hellmann’s)
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon white vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 tablespoon everything bagel seasoning (plus more for garnish)
  • 2 tablespoons black sesame seeds (for spider web lines)
  • 1 tablespoon sour cream (thinned with water for piping)
  • Black food coloring gel (optional, for darker web effect)

Instructions

  1. Boil the eggs: Place 12 eggs in a single layer in a medium saucepan. Cover with cold water by about an inch. Bring to a rolling boil over high heat. Once boiling, cover the pot, turn off the heat, and let sit for exactly 10 minutes.
  2. Prepare the ice bath: While eggs cook, fill a large bowl with ice and cold water. After 10 minutes, transfer eggs to the ice bath using a slotted spoon. Let sit for at least 5 minutes.
  3. Peel the eggs: Gently tap each egg on the counter to crack the shell, then roll between your hands to loosen. Start peeling from the wider end. If shell sticks, run under cold water while peeling.
  4. Cut the eggs: Slice each egg in half lengthwise. Wipe knife clean between cuts. Gently pop out yolks into a small mixing bowl. Arrange egg white halves on serving platter, cut side up.
  5. Make the filling: Mash yolks with a fork until crumbly. Add Greek yogurt, mayonnaise, yellow mustard, white vinegar, salt, and pepper. Stir until smooth and creamy. Taste and adjust seasoning. Fold in 1 tablespoon everything bagel seasoning.
  6. Fill the eggs: Spoon filling into a piping bag fitted with a small round tip (or a zip-top bag with corner snipped). Pipe filling into each egg white half, mounding slightly in the center.
  7. Create the spider web: In a tiny bowl, mix sour cream with a few drops of water until thin enough to pipe. Add black food coloring gel if desired. Spoon into a separate zip-top bag and snip off a tiny corner. Pipe concentric circles on each filled egg, then drag lines from center outward with a toothpick or knife tip. Wipe toothpick clean between eggs.
  8. Add finishing touch: Sprinkle a pinch of everything bagel seasoning over each egg. Place a few black sesame seeds on the web to look like tiny spiders. Chill in fridge for at least 30 minutes before serving.

Notes

For easier peeling, add 1 teaspoon baking soda to the water before boiling. Older eggs (about a week old) peel more easily. The filling can be made a day ahead; assemble and decorate on serving day. For dairy-free, use vegan yogurt and sour cream alternatives. Store leftovers in an airtight container with a damp paper towel for up to 2 days.
