Instructions

  1. Prep the shallots: Peel and slice shallots into thin rings (about 1/8-inch thick). Separate rings gently. Set up an assembly line: shallots, buttermilk in a shallow dish, and flour mixed with salt, pepper, and garlic powder in another shallow dish.
  2. Fry the shallots: Heat about 1 inch of oil in a large skillet to 350°F. Dip shallot rings in buttermilk, let excess drip off, then coat in flour mixture. Fry in batches for 2-3 minutes per side until golden brown. Transfer to paper towels and sprinkle with salt while hot.
  3. Blanch the green beans: Bring a large pot of salted water to a boil. Add green beans and cook for 3-4 minutes until bright green and tender-crisp. Drain and plunge into ice water to stop cooking. Drain again and pat dry.
  4. Make the cream sauce: In the same pot, melt butter over medium heat. Add mushrooms and cook for 5-6 minutes until browned. Add garlic and cook for 30 seconds. Sprinkle flour over mushrooms and stir constantly for 1 minute. Slowly whisk in milk, then heavy cream, salt, pepper, and nutmeg. Continue whisking until sauce thickens, about 3-4 minutes.   6. Bake: Bake uncovered for 20-25 minutes until bubbly around the edges and shallots are deeply golden. If shallots brown too quickly, tent with foil for the last 10 minutes. Let rest for 5 minutes before serving.

Notes

Make extra crispy shallots as they disappear fast. The cream sauce can be made up to two days in advance. For a gluten-free version, use a gluten-free flour blend.
