A homemade version of the iconic In-N-Out Double Double smash burger featuring juicy, thin smashed beef patties with melted American cheese, fresh veggies, and a tangy house spread. Perfect for quick, satisfying meals at home.

  • 1 pound (450 g) ground beef (80/20 blend)
  • Salt and pepper to taste
  • 4 slices American cheese
  • 4 soft hamburger buns (regular or potato buns)
  • ½ cup (120 ml) mayonnaise
  • 2 tablespoons ketchup
  • 1 teaspoon yellow mustard
  • 1 teaspoon white vinegar
  • 2 large leaves iceberg lettuce
  • 2 medium tomatoes, thinly sliced
  • ¼ cup dill pickle slices
  • ¼ cup yellow onion, finely chopped or thinly sliced

Instructions

  1. Prepare the spread by mixing ½ cup mayonnaise, 2 tablespoons ketchup, 1 teaspoon yellow mustard, and 1 teaspoon white vinegar in a small bowl. Stir well and refrigerate.
  2. Wash and dry lettuce leaves, slice tomatoes thinly, slice dill pickles, and finely chop or thinly slice yellow onion. Set aside.
  3. Divide ground beef into 4 equal balls (about 4 ounces or 113 g each), keeping the meat loose and not overworked.
  4. Heat a cast iron skillet over medium-high heat for about 5 minutes until very hot.
  5. Place a beef ball in the skillet and immediately press down firmly with a spatula to smash it to about ¼ inch (0.6 cm) thick. Hold pressure for 10 seconds to develop a crust. Season with salt and pepper.
  6. Cook the patty undisturbed for 2-3 minutes until edges are crispy and browned.
  7. Flip the patty carefully, place a slice of American cheese on top, and cook for another 1-2 minutes until cheese melts.
  8. Toast the buns face down in a separate pan or on the skillet edge until golden and slightly crisp.
  9. Spread a generous amount of house spread on both bun halves. Layer lettuce, tomato slices, cheesy patty, pickles, and onions. Repeat for the second patty and bun to build the double stack.
  10. Serve immediately with your favorite sides.

Notes

Do not press down on the patties after the initial smash to keep them juicy. Use room temperature beef for better smashing and searing. Toast buns lightly to avoid sogginess. Cooking two patties simultaneously is possible but avoid overcrowding the pan to maintain crust.
