A warm, sweet and savory flatbread featuring honey roasted figs, creamy goat cheese, and fresh peppery arugula, perfect for a quick snack or elegant appetizer.

Ingredients

Scale
  • 1 thin store-bought flatbread or naan (about 68 inches)
  • 68 fresh ripe figs, sliced in halves or quarters
  • 4 ounces (115 grams) creamy goat cheese, crumbled or sliced
  • 2 tablespoons (30 ml) runny honey, divided
  • 2 cups (60 grams) fresh arugula leaves, washed and dried
  • 1 tablespoon (15 ml) olive oil
  • 1 teaspoon (5 ml) fresh lemon juice
  • Freshly cracked black pepper, to taste
  • Optional: toasted walnuts or pine nuts for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Rinse figs and pat dry. Slice into halves or quarters. Place in a bowl and drizzle with 1 tablespoon (15 ml) honey, tossing gently to coat.
  3. Spread figs evenly on one side of a baking sheet lined with parchment paper. Roast for 12-15 minutes until caramelized and tender but not mushy.
  4. Place flatbread on the other side of the baking sheet or on a separate sheet. Brush lightly with 1 tablespoon (15 ml) olive oil.
  5. Bake flatbread for 6-8 minutes until edges start to brown and bread is crisp but still pliable.
  6. Remove baking sheet from oven. Arrange roasted figs over flatbread, leaving a small border around edges.
  7. Crumble or dollop goat cheese evenly over figs. Return to oven for 5 minutes to soften cheese.
  8. While flatbread finishes baking, toss arugula with lemon juice and freshly cracked black pepper in a small bowl.
  9. Once out of the oven, scatter dressed arugula on top and drizzle with remaining 1 tablespoon (15 ml) honey.
  10. Optionally sprinkle toasted nuts over the flatbread. Slice and serve warm.

Notes

Roast figs slowly to avoid drying or burning. Brush olive oil on flatbread for a golden crisp crust. Add arugula fresh after baking to keep its peppery crunch. If figs cook faster than flatbread, remove figs and tent with foil to keep warm. Use mild chèvre goat cheese for best flavor balance. For vegan option, substitute goat cheese with plant-based cheese and honey with agave or maple syrup.
