Hearty Poor Mans Beef and Potato Stew: Easy One Pot Meal

A thick, savory, and deeply satisfying beef and potato stew that proves you don’t need a lot of money to eat like royalty. This one-pot wonder features tender beef, potatoes that soak up all the flavor, and a rich, velvety broth.

  • 1 ½ pounds beef chuck or stew meat, cut into 1-inch cubes
  • 3 tablespoons olive oil, divided
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 4 medium carrots, peeled and sliced into rounds
  • 3 celery stalks, sliced
  • 2 pounds Yukon Gold or Russet potatoes, peeled and cut into 1-inch cubes
  • 4 cups low-sodium beef broth
  • 1 cup water
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Prep your ingredients first. Cube the beef, dice the onion, mince the garlic, slice the carrots and celery, and peel and cube the potatoes.
  2. Season the beef generously. Pat the beef cubes dry with paper towels and season them all over with salt and pepper.
  3. Heat 2 tablespoons of olive oil in your Dutch oven over medium-high heat until shimmering.
  4. Brown the beef in batches. Add the beef cubes in a single layer without overcrowding. Cook for 3-4 minutes per side until deeply browned. Transfer to a plate and set aside.
  5. Reduce heat to medium and add the remaining 1 tablespoon of olive oil. Add the diced onion and cook for 4-5 minutes until softened and translucent.
  6. Add the minced garlic, sliced carrots, and sliced celery. Cook for another 3-4 minutes, stirring frequently.
  7. Stir in the tomato paste and cook for 1-2 minutes, stirring constantly.
  8. Return the browned beef to the pot. Add the cubed potatoes, bay leaves, dried thyme, and smoked paprika. Stir to coat.
  9. Pour in the beef broth and water. Bring to a gentle boil.
  10. Reduce heat to low, cover the pot, and simmer for 1 ½ to 2 hours, stirring occasionally, until beef is fork-tender and potatoes are soft.
  11. Remove the bay leaves.
  12. Taste and adjust seasoning with more salt and pepper if needed.
  13. Let the stew rest for 10 minutes before serving. Serve hot, garnished with fresh parsley.

Notes

Don’t rush the browning step—it’s crucial for flavor. Pat the meat dry before seasoning. Use low-sodium broth to control salt. For a thicker stew, mash some potatoes against the pot or use a cornstarch slurry. This stew tastes even better the next day.
