A balanced and delicious bento box lunch designed to sneak in hidden vegetables for picky eaters, featuring turkey meatballs with grated veggies, fresh crunchy sides, and wholesome grains.

  • 1 lb (450 g) ground turkey or chicken (lean)
  • 2 large eggs, room temperature
  • 1 cup (100 g) shredded cheddar cheese (mild)
  • 1 medium zucchini, finely grated
  • 1 medium carrot, finely grated
  • 1 cup (30 g) fresh spinach, finely chopped or pureed
  • ½ cup (120 ml) steamed and pureed cauliflower
  • 1 cup (185 g) cooked quinoa or brown rice
  • 23 pieces whole wheat pita bread or mini wraps
  • ½ cup (60 g) snap peas, trimmed
  • ½ cup (50 g) cucumber slices
  • ½ cup (75 g) cherry tomatoes, halved
  • ½ cup (120 ml) hummus (classic brand recommended)
  • 1 small avocado, ripe and sliced
  • 1 tbsp (15 ml) olive oil
  • Salt and pepper to taste
  • Optional: dash of smoked paprika or mild cumin

Instructions

  1. Finely grate the zucchini and carrots using a grater or food processor. Place them in a clean kitchen towel and squeeze out excess moisture.
  2. Chop or puree the spinach and steam the cauliflower until soft, then blend it smooth.
  3. In a large bowl, combine ground turkey, eggs, shredded cheddar cheese, grated zucchini, grated carrots, chopped spinach, and pureed cauliflower. Season with salt, pepper, and optional smoked paprika.
  4. Shape the mixture into small, bite-sized meatballs (about 1 inch / 2.5 cm).
  5. Heat olive oil in a non-stick skillet over medium heat. Cook meatballs for 4-5 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Alternatively, bake on a lined baking sheet at 375°F (190°C) for 15-20 minutes, turning halfway.
  6. While meatballs cook, prepare cooked quinoa or brown rice according to package instructions.
  7. Assemble the bento box by arranging cooked meatballs, quinoa or rice, sliced cucumber, snap peas, cherry tomatoes, and dollops of hummus.
  8. Add sliced avocado last to keep it fresh and green.
  9. Seal the box tightly. If making ahead, keep refrigerated and add avocado just before serving.

Notes

Squeeze excess moisture from grated veggies to avoid soggy meatballs. Keep meatballs uniform in size for even cooking. Baking is a good alternative for softer meatballs. Add avocado just before serving to prevent browning. Test one meatball before assembling to adjust seasoning or texture. Use a parchment-lined baking sheet for easier cleanup if baking.
