Healthy 30-Minute Ground Beef and Sweet Potato Hash

A quick, wholesome skillet hash combining savory ground beef and crispy sweet potatoes with warm spices, perfect for busy weeknights or last-minute dinners.

  • 1 pound (450g) ground beef (85% lean)
  • 2 medium sweet potatoes, peeled and diced into ½-inch cubes
  • 1 medium yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 1 medium bell pepper, diced (optional)
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • ½ teaspoon ground cumin
  • Pinch of ground cinnamon
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Peel and dice the sweet potatoes into ½-inch cubes. Finely chop the onion, dice the bell pepper if using, and mince the garlic.
  2. Heat a large skillet over medium heat and add 2 tablespoons of olive oil. Warm until shimmering but not smoking.
  3. Add the diced sweet potatoes in a single layer. Cook undisturbed for about 4 minutes to develop a golden crust, then stir and cook for another 6 minutes until tender but still holding shape. If sticking occurs, add a splash of water and cover to steam gently.
  4. Push sweet potatoes to one side of the skillet. Add chopped onion and diced bell pepper to the empty side and cook until softened and fragrant, about 3 minutes.
  5. Add ground beef to the skillet, breaking it apart with a spatula. Season with salt, pepper, smoked paprika, cumin, and a pinch of cinnamon. Cook until browned and no longer pink, about 6-8 minutes. Drain excess fat if necessary.
  6. Stir in minced garlic and cook for 30 seconds to 1 minute until fragrant. Mix everything together in the skillet to combine flavors.
  7. Taste and adjust seasoning with salt and pepper as needed. Remove from heat and sprinkle with fresh parsley before serving.

Notes

Use medium heat to get crispy sweet potatoes without burning. Let sweet potatoes cook undisturbed to develop a golden crust. Drain excess fat from beef to keep dish light. Garnish with fresh parsley or cilantro for brightness. Can substitute ground beef with ground turkey, chicken, or plant-based crumbles. For a vegetarian version, use crumbled firm tofu or cooked lentils and add extra veggies.
